    Come Join Vandana in her kitchen and explore the East through the recipes, dishes and spices of India.

    Dal is one of the dishes that I grew up eating in India at every meal apart from breakfast. There are thousands of different dal recipes and every family has their own particular recipe. Dal has a long and fascinating history in Indian cuisine. Lentils are also high in protein, packed with B vitamins, magnesium, zinc and potassium and a complete meal when eaten with a side of rice, quinoa or even sourdough bread.

    We will be cooking a versatile Dal dish as well as a Masala Curry if you may. So we will make two separate dishes in this class. The idea is to teach several basic Indian cooking techniques so that you can modify them with what you have in the house.

    Corona Virus times teaching - I will not expect you to have all the spices and ingredients needed. Instead given these times the recipe will have several variations so that you can use whichever spices and lentils you may have. We will work with any type of lentil you might have at home - chickpeas, kidney beans, moong, etc. I want to be flexible and also want you to not stress about going to grocery stores to find any specific ingredient. And yet we will make authentic Indian dishes. I will teach a basic masala - sauce/gravy which will also be incorporated into a second vegetable or chicken dish.

    So this will be a cooking class with a lentil dish and a second masala dish!

    How the class will work - A recipe will be provided with all the variations. Gathering ingredients, prepping and certain steps of the recipe will be done before the actual class starts. I will then teach you the dish step by step and you will follow me as we make the dish together in our receptive kitchens.

    I am certain there will be lots of laughing, chatting and getting to know each other in the process. I want to encourage this interactivity given that most women are spending a lot of time cooking in their kitchens by themselves nowadays.

    Before the actual cooking we will start class with an ice breaker and a quick discussion about Indian cuisine and the techniques.

    The class will take place on Zoom. Before the class you will be provided with a password for our class, along with a recipe and instructions to follow before we all get together.

    The idea is to make some friends, sip some kombucha or wine while we cook and learn a brand new dish from a cuisine that might seem a little foreign to you. I will be with you at every step and hope to add some cheer and spice in your life by sharing my knowledge of my history and culture. Cant wait to meet up in our virtual kitchens!
